Chef Peter Woolsey of FringeArts’ in-house brasserie La Peg prepares a unique meal that exemplifies his passion for French cuisine with favorite dishes from his three restaurants Bistro La Minette, La Peg, and the recently-opened Gabi.
All FEASTmas dinners include four courses, wine pairings, and a presentation by the chefs around the evening’s theme. All proceeds benefit FringeArts.

About the Chef
As an adolescent, Peter Woolsey started cooking breakfast foods and pasta sauces by his father’s side. After attending Johnson and Wales for the culinary arts, he began his professional career cooking at the Sun Valley Resort and New York’s Waldorf-Astoria. In 2000, Peter moved to France to study pastry at Le Cordon Bleu. In Paris, Peter worked for the world famous three-star Michelin restaurant, Lucas Carton, under Alain Senderens and Frederic Robert. In 2002, he moved back to Philadelphia to work at Georges Perrier’s Le Mas Perrier before heading to the renowned Striped Bass under Alfred Portale and Chris Lee. In 2008, Peter opened Bistrot La Minette, an authentic and beloved French bistro in Queen Village. In 2014, he opened his second restaurant, La Peg, a contemporary brasserie at FringeArts, and recently expanded to a third venture with the much-anticipated Gabi, and all-day French diner on North Broad Street.
